7 Day Pledge to go Veg !!

It's national veggie week this week so seeing as I'm already veggie gonna go vegan for the week !

So tried tofu scrammble for the first time and it was pretty sweet !!

Recipe:

Block of firm tofu
Clove of garlic
Chopped onion
Handful of cherry tomatoes
Chopped mushrooms
Vegetable stock
Corriander

Fry the garlic and onions in a pan. Drain the tofu and pat dry. With a potato masher break up the tofu and add to the garlic and onions. Mix a cube of vegetable stock with a small amount of water and add to the pan while stirring. When the tofu has turned a golden brown colour add the tomatoes and mushrooms. When the tomatoes and mushrooms have softened, add corriander and pepper to season.

Serve however with whatever you like. It's scrumptious !!
